Recipe Junkie - Tomato Pie


Is your kitchen counter filled with tomatoes from the garden and you have no idea what to do with them?  Have you made salsa, tomato soup, and tomato sandwiches until you want to totally give up gardening?  You could play tennis with the tomatoes, stick candles in them, or use them as golf balls.  If you are desperate, here is a tomato pie recipe that is for you, delicious and easy. Debbie's Tomato Pie

1 – Baked Pie Shell   (set aside)
4 or 5 thinly sliced tomatoes
¼ c chopped spring onions
¾ cups shredded mozzarella cheese
¾ cups cheddar cheese
¾ cups mayonnaise

Place tomatoes in baked pie shell.  Sprinkle with onion – salt and pepper to taste.  Mix mayo and cheeses into a creamy mixture and layer on top of tomatoes and onions.  Put back in the oven at 350 degrees for 30 minutes or until light golden brown.  Delicious!
