Recipe Junkie - Truffle Cake

Oh Yes! I am a recipe junkie!  Watch your recipes around me.  I will steal a recipe from anyone or anywhere.  Doctors offices, airports, hospitals, any waiting room with a Woman's Day.  I simply can't help myself. 


A few months ago, I found a recipe for a Truffle Cake with only three ingredients.  I made it this morning and it is delicious.  Here is the recipe:


Truffle Cake
18 oz. chocolate chips 
2 sticks unsalted butter
6 large eggs, room temperature


1. Heat oven to 425 degrees.  Spray pie plate or cake pan with nonstick spray.                       


2. Melt chips and butter together; stir until blended.


3. Beat eggs in a large bowl on high for 7 minutes, or until tripled.  Gently fold in chocolate mixture until blended.  Pour into cake or pie pan.


4. Cover pan loosely with foil; bake 40 minutes.  (Cake looks soft, but sets when cold.)


5. Cover and refrigerate at least 3 hours or until firm. 
Sprinkle with powdered sugar to make it look pretty.


This dessert tastes like the inside of a Lindor Truffle.


I used semi-sweet chocolate chips - next time I will try milk chocolate.
